から揚げ / JAPANESE FRIED CHICKEN / KARAAGE
My friend was going back to Nagoya so I decided for everyone to have dinner at my house before he goes back. One of the dishes I made was karaage! (´∪`*)
Its really simple to make. All you need is the following!
chicken thigh (this cut is most desirable because you still want a bit of fat so that it will be crispy), potato or corn starch (potato is better because potato) salt, black pepper, water, AP flour
About 2 hours in this will be okay.
ginger juice, salt, black pepper, tiny bit of light soya sauce
I served it with these dipping sauces which were pretty yum too.
light soya sauce, honey, finely minced garlic & ginger, sesame seed oil
kewpie mayo, sriracha chili sauce
1.) Prep your ingredients and cut up your poulet in to bite sized pieces.
2.) Marinade your poulet in that sauce for 2 hours.
3.) When you take out the chicken after 2 hours, pat the excess liquid off.
4.) Make a dredging/battering station. One bowl with black pepper, salt, tiny bit of flour, potato starch and water. Another bowl with the same just no water.
5.) Batter the chicken. Don’t make a thick coating. Then dredge the pieces in the dry mixture.
6.) Prep a non-stick skillet and fill it half way with oil or enough to cover the chicken pieces half way (so you just turn it to fry it up). We’re gonna shallow fry these unless you are a privileged mothafucka with a deep fryer.
7.) Fry until golden brown and then serve hot with your favorite sauce!
